On the pop up canvas there is a strip about 3” x 3’ at the very top above the back door, that is mesh, guessing it’s supposed to be an air vent, but the cold air that comes in from it, it’s currently 2c outside, is ridiculous. Is it a vent for safety purposes, in which case leave it alone, or could we cover it?

As you suspect, it's there for a reason, safety. That's also why you should always crack open the front windows when using the gas hob (get the wind deflectors to keep the rain out).
You could try turning the van round to face the wind, that will avoid the icy blast.
Does it feel like the warmth of the heating system is fighting a losing battle?

It was on constantly last night, and it’s predicted to be -5 tonight.

It's unfortunate there's a cold snap for a couple of days, I bet turning the van to face the wind would help. I had a sleepless windy night - it was like being inside a set of bellows, general flapping of the "tent" with frequent "whoosh" as it was inflated by the sheer force. That flashback has reminded me of the nuclear option - sleep downstairs, drop the roof. More streamlined, no tent, no vent.

Bought my Nugget + just before Xmas. I’ve just been away for about 6 weeks in it. . France & Spain. I would estimate that at least 50% % of the time I ended up dropping the roof & sleeping downstairs. Too cold, too windy, too noisy etc. Making me wonder if a high roof or Fiat Ducati might have been a better choice for me.

It's a compromise, each have their pros and cons. Pop tops are multi purpose - can be used like a car, easier to park at home and get better MPG than larger motorhomes. Classic case of "jack of all trades, master of none".
